What Is Galbitang? A Friendly Guide to Korean Beef Short Rib Soup + My Recent Visit to Gammiok in Namyangju

If a friend asked me what Korean soup to try first, galbitang would be high on my list. It is warm, comforting, and easy to enjoy even if you are not used to strong or spicy Korean food. Recently, I had a nice bowl of galbitang at Gammiok Seolleongtang in Namyangju, and it reminded me why this dish is so easy to recommend.

The Korean food, galbitang, is boiling. It's a soup dish, but beef ribs, ginseng, and jujube are mixed together and boiling deliciously

If a friend asked me, “What Korean soup should I try if I’m visiting Korea?” I would probably recommend galbitang pretty quickly.

Galbitang is one of those dishes that feels very easy to like. It is not too spicy, not too heavy, and not too complicated. It is basically Korean beef short rib soup, but that simple description does not fully explain why people love it so much.

The broth is usually clear, warm, and full of beef flavor, but in a very calm way. It is not aggressive or greasy. It has a soft, comforting taste that feels especially nice when you want something warm and satisfying. The short ribs are tender, and the soup often has a gentle sweetness from radish and onion, which makes the whole bowl feel balanced.

So if I had to explain galbitang to someone who has never tried it before, I would say this:

This is the appearance of a restaurant with Korean food such as galbitang, kimchi, and kkakdugi.

It tastes like a clean, comforting beef soup with tender short ribs, a deep savory broth, and a soft natural sweetness in the background.

It is the kind of food that makes you feel better while you are eating it.
Very comforting, very steady, and very Korean in a quiet way.

That is also why I think galbitang is such a good dish for foreign visitors. A lot of people think Korean food is always spicy or intense, but galbitang shows a softer side of Korean food. It is approachable, filling, and easy to enjoy even if you are trying Korean cuisine for the first time.

And if I were continuing that conversation with a friend, I would probably say,
“Actually, the galbitang I had recently was here.”

Recently, I went to Gammiok Seolleongtang in Namyangju, and I ended up liking it for exactly the reasons I usually like galbitang in the first place. The soup felt clean and comforting, not overly salty or oily, and it was easy to finish without feeling too full or tired of the flavor.

This is a picture of the inside of a restaurant in Namyangju called Maeul-ok, which sells Korean food, galbitang.

What I liked most was that it did not try too hard. Sometimes that is exactly what you want from a soup place. You do not need something flashy. You just want a warm bowl that tastes reliable, and this place felt like that.

The side dishes also made the meal better. The kimchi, kkakdugi, and fresh kimchi worked really well with the soup, and that matters a lot in Korean meals. A spoonful of hot broth and a bite of kimchi is such a simple combination, but it is honestly one of the best parts of eating soup in Korea.

The restaurant itself also felt comfortable. It was clean, the staff were friendly, and it felt like an easy place to revisit. That matters more than people think, especially when you are stopping somewhere during a work trip or while moving around by car.

Here is the basic info if you want to look it up:

So if you are curious about galbitang in Korea, this is how I would put it very simply:

It is one of the most comforting Korean soups you can try, and if you want a version that feels clean, steady, and easy to enjoy, the bowl I had recently at Gammiok Seolleongtang in Namyangju was a good one.

Some foods impress you because they are bold.
Galbitang is different.
It stays with you because it is warm, gentle, and quietly satisfying.
